Maggie and Micah Engagement Pictures

I must admit this is probably one of the most fun-loving couples I’ve ever met.  Maggie, Micah and families will travel from New Mexico and Texas to the rolling hills of Richland, MO for their July 2nd Rustic tent wedding.  Maggie spent much of her life visiting with family and friends at the beautiful Nickens family country home just outside of Waynesville, MO.  I can’t wait to blog about the details of this wedding!  I have been waiting to explore my Midwest country-side wedding design for years now… make sure you bring your dancing boots and Yee-Haww’s – because Kristin Ashley Events is going country!

Ok, I have a confession, I am one of those girls who see’s something on the TV and if I like it or if it looks good/cute, I buy it.  You never know when it could be the “best money ever spent”!  Recently, I saw on The Today Show a cookbook by Cini Leive, Editor of Glamour magazine, “100 Recipes Every Woman Should Know”.  It has an adorable cover and fun recipes, but the one that struck my interest was the, “Engagement Chicken”.  At first I thought this had to be a joke, but I had room on my bookshelf, so there I was on Amazon purchasing my next cookbook.

When I received it in the mail, I went straight to this Engagement Chicken recipe and read all the SUCCESS stories behind this chicken…they have heard from sixty-plus women who have gotten married (or plan to) after making this dinner (they also feature some of the stories).

So to all my friends, family and future clients… try this… and if you get a ring be sure to let me know!!!

Engagement Chicken

1 whole chicken (I used 6.5 lbs) it calls for 4lbs

1/2 cup fresh lemon juice, plus 2 or 3 lemons

1 tbspn kosher salt (or sea salt)

1/2 tspn ground pepper

Fresh herbs for garnish (4 rosemary sprigs, 4 sage sprigs, 8 thyme sprigs and 1 bunch of parsley)

1.  Preheat oven to 400*.  Remove the giblets from the chicken- wash chicken inside and out with cold water, then let chicken drain, cavity down, in colander for 2 minutes.

2) Pat down with paper towel.  Place chicken breast-side down in medium roasting pan fitted.  Pour the lemon juice all over chicken, both inside and out.  Season the chicken all over with salt and pepper inside and out.

3) Prick whole lemons three times in different spots and place deep inside cavity of chicken.  (tip if the lemons are not soft, roll them on counter first).  If lemon is partly sticking out, it’s ok.  I used tooth picks to keep it in.

4) Put in oven at 350* for 2 hours.  (the book calls for 1.5 but the bag on chicken said 3) I got lucky and guessed because I don’t own a meat thermometer, if you do, 180* is the goal.  Every 30 minutes I poured the lemon juice over chicken, I was afraid it was going to be dry if not.

5) When it has a nice golden brown color, place the garnishes on top.  Let sit for 10 minutes before serving.  Serve chicken with a little juice.

I had my in-laws over for dinner for a test, and everyone LOVED it!

To say the least, I will for sure make this again and I used this book for everything I made; Engagement Chicken, I’ll Take Care of You Mashed Potatoes, Beyond Basic Broccoli and Mea Culpa Cheesecake.  So if you have a Bridal Shower coming up or just need a great gift idea…I highly suggest this fabulous cookbook!

Kate and Grant Engagement!

For me hearing a good proposal story is enough to make my day.  This engagement is no exception, hearing their story brought tears to my eyes and goosebumps on my arms… Meet Kate and Grant, they met while attending Missouri University in Columbia, Missouri.  Kate and Grant reside in South Carolina but decided to head back to Columbia for a Mizzou/Kansas State football game on November 13th.  Little did Kate know Grant had the weekend planned for all of their friends and family to attend the tailgate to help celebrate their engagement.

Grant took Kate took a short walk to the Francis quadrangle where he proceeded to propose.  Patrick Fallon (photographer) was hiding in the bushes to capture the moment…

They will tie the knot on August 20th, 2011 at Trinity Lutheran St. Louis followed by cocktail reception at Lumen Private Event.

Nicole and Brett Engagement Pictures

If you don’t believe in love at first site…you might after you meet Nicole and Brett.  Their story dates back as far as grade school.  Nicole and Brett grew up in Millstadt, Illinois but the past four years have been apart getting their education.  Nicole went off to school in Chicago studying Elementary Education at Concordia University Chicago and Brett went to Rhodes College on an academic scholarship and played on their soccer team. Brett will be attending the Concordia Theological Seminary in Fort Wayne, Indiana this September.  They have been through so much as individuals yet stand by each other through everything.  Nicole and Brett have always been a team and make an extraordinary couple, they truly are best friends.

Mollie and Matt Engagement Pictures

Mollie and Matt have set the date for March 12th, 2011.  Mollie and Matt have been dating for nine years…yes I said nine years! They were one of the first St. Louis couples that I met when I started dating my husband, Ryan.  From day one I knew this couple had something special.  Matt is a very professional guy who spends most of his time studying medicine, while Mollie is a warm hearted, free spirited girl who spends most of her time working at a local bank.

I was on cloud nine when Mollie and Matt hired me to be their wedding consultant.  Mollie and I see eye to eye on pretty much everything when it comes to planning their wedding.  It didn’t take Mollie long to express to me her vision for their day; a small intimate wedding, warm hues with a hint of mint green and memories that would last a lifetime.  This St. Louis wedding will take place at Greenbriar Hills Country Club (Kirkwood) and will have some of the best vendors aboard; Clary Photography, Millennium Lighting and Entertainment, The Cakery, Tina Barrera, Paper Frosting and Connie Duglin Linen are just to name a few.
